Background
Fairmont Singapore and Swissôtel The Stamford are major hospitality properties in Singapore, with extensive food and beverage operations across their hotels, restaurants, bars and events facilities. The properties also operate an Aquaponics Farm, supporting their commitment to more sustainable food production.
With multiple commercial kitchens generating unavoidable food waste every day, the hotels were looking for a more effective way to manage this waste, reduce the volume requiring disposal and make better use of the resources contained within it. They needed a solution that could process food waste on site, provide greater visibility of the quantities being generated and support their wider sustainability and resource recovery objectives.
The Green Solution
Working with Life Lab Resources, a total of three WasteMaster units were installed across Fairmont Singapore, Swissôtel The Stamford and Raffles City Convention Centre. Food waste is separated at source within the kitchens before being manually loaded into WasteMaster. The system processes the waste over approximately 12 hours.
During processing, around 80% of the food waste is evaporated, while the remaining 20% is converted into a nutrient-rich substrate. This significantly reduces the volume of food waste requiring removal from the properties. WasteMaster also provides the hotel teams with greater visibility of their food waste. The system tracks the quantity processed each day, while cloud-based monitoring provides information on waste processing and machine performance. This enables the teams to monitor performance and make informed operational adjustments.
The resulting substrate is collected by sustainability partner LifeLabs and transported to another farm in Singapore, where it is converted into fish feed. Fairmont Singapore and Swissôtel The Stamford then purchase this fish feed for use at their own Aquaponics Farm, creating a closed-loop connection between the hotels’ food waste and their food production operations.
Quantifiable Results
The three WasteMaster units installed across Fairmont Singapore, Swissôtel The Stamford and Raffles City Convention Centre have achieved:
Approximately 100,000 kilograms of food waste processed annually, underline a commitment to innovation and environmental stewardship in hospitality
Up to 80% of food waste is evaporated during processing
The remaining 20% is converted into a nutrient-rich substrate
The cloud-based monitoring system also provides detailed reporting on food waste processing and machine performance.
